A Guizhou Hotpot Farewell in Liuzhou: A Taste of Sour Tomato Soup in Qian Jia Po
Our trip to Liuzhou reached a memorable climax with a farewell meal at "Qian Jia Po," a true culinary find specializing in Guizhou-style sour tomato soup hotpot.
The dining experience began with the creation of the essential dipping sauce: a flavorful mix of chili oil, crunchy fried peas, and fresh coriander. Soon, the table was laid with an array of fresh ingredients, all awaiting a quick dip in the enticingly bubbling broth.
The hotpot itself was undoubtedly the star of the meal. The spectacle of the rich, complex sour tomato soup included an abundance of fried tofus, distinctive dark green tofu blocks, and crisp lettuces. We ordered several complementary side dishes, including thick potato slices, an assortment of other vegetables, and a separate bowl of sauerkraut for an added layer of tang. A unique plate of purple bracken also graced our table.
For proteins, we chose delicate slices of fresh beef, various beef offals, and tripes, all marrying perfectly with the sour soup. A plate of deep-fried meat provided a welcome textural contrast. Visible nearby was a distinctive white cup with a blue and red design, featuring the restaurant's name.
From a close-up of the fresh beef to the deep-fried tofu sticks, every element was a delight. Stirred occasionally with a spoon, the bubbling pot created a perfect, steamy centerpiece for our last Liuzhou lunch, leaving us with a warm and lasting memory of Guizhou's captivating cuisine.
