A Guizhou Culinary Journey: Longgang's Sour Soup Hotpot
Our final Sunday of 2025 concluded with an authentic and warming meal at "Outside the Mountains," a Guizhou sour soup hotpot spot in Longgang. On a decidedly chilly day, the promise of the steaming, tangy broth was an irresistible invitation.
The Atmosphere and Setup
Upon entering, the restaurant offered an immediate sense of warmth and welcome. The tables were set simply for the upcoming feast. At our spot, an empty bowl awaited its purpose, a cup of tea provided initial comfort, and nearby shelves were already stocked with an array of dipping sauces, hinting at the personalized flavors to come.
The Feast Commences
The centerpiece, the pan of sour soup, was soon placed on the stove. As it began to simmer, its fragrant steam filled the air, quickly reaching a bubbly readiness to receive the ingredients.
The table soon transformed into a vibrant display. We began with the essentials: a plate of thinly sliced beef and the crucial dipping sauce. This particular mix was a lively combination of chili pepper, garlic, fried beans, coriander, and a signature secret sauce—a vital element of the hotpot experience.
Main Attractions and Components
The meal's variety quickly expanded with the arrival of succulent beef tripe and a platter of golden-brown fried chicken wings, served alongside refreshing cucumbers. We paused to admire the crispy texture of the wings, and another plate brought the chewy, flavorful delicacy of classic chicken feet.
No traditional hotpot is complete without its full array of accompaniments. Our selection included firm tofu blocks, a rich and savory bowl of goat meat, and two crisp vegetable choices: green celtuce and fresh green bamboo shoots. Completing the spread was a plate of savory fried tofu sheet rolls.
A Memorable Conclusion
With every component assembled, our table was a beautiful, ingredient-laden chaos, ready for the hotpot experience. As we enjoyed the meal, a refreshing drink marked with a mountain-shaped sign sat on the table—a final, apt acknowledgment of the restaurant's name and its Guizhou origins. It was a warm, flavorful, and truly memorable way to close out the year.
