Southern Hubei Golden Egg Rolls: A Mountainous Lunar New Year Delicacy

Preserving Tradition: A Culinary Glimpse into Enan's Festive Preparations

Introduction

As the Lunar New Year approaches, households in the mountainous regions of Southern Hubei (Enan) prepare food in advance to entertain visiting guests. Due to the cold weather in the twelfth lunar month, these foods can be preserved for about a week even without refrigeration, perhaps representing an early form of "pre-made dishes."

Among these, the Golden Egg Roll is a dish with distinct local characteristics. Although the freshly prepared egg roll tastes the best, due to the lengthy preparation time, people usually make them ahead of time and reheat them before serving.

Preparation Process

Prepare the Egg Crepe: Whisk chicken or duck eggs into a liquid and fry them into thin, golden-yellow crepes in a frying pan.

Prepare the Filling: Select skinless pork with an even mix of fat and lean meat (usually pork belly) and chop it into a fine mince. Add seasonings such as starch, salt, MSG, soy sauce, green onion, and ginger, then mix well.

Rolling: Place an egg crepe flat on a cutting board, use a cleaver to spread the seasoned meat mince evenly over the crepe, and then roll the crepe into a long strip to form the egg roll.

Steaming: Place the rolled egg roll strips into a steamer and steam them over high heat for about 20 minutes.

A Glimpse into the Mountain Kitchen

While waiting for the egg rolls to steam, one can observe the unique sights characteristic of a local mountain kitchen. A washed cured pig's head (preserved pork) hangs high beneath the eaves outside the kitchen.

Given the abundance of wood resources in the mountains, the fire-powered stove is an essential piece of cooking equipment for every household.

On the wall next to the stove, tools commonly used by villagers, such as hatchets, bamboo knives, and handsaws, are neatly hung.

Savoring the Delicacy

After the long steaming process, the Golden Egg Rolls are finally cooked through. Take a strip out of the steamer while it's hot, slice it into small pieces, and enjoy this special treat (but be careful not to burn yourself).
