Guizhou Sour Hotpot: A First Taste in Guiyang

Introduction

Our inaugural lunch in Guiyang, Guizhou, led us to a downtown restaurant specializing in Guizhou Sour Hotpot. This signature dish of the province boasts a uniquely flavorful broth, crafted from fermented cherry tomatoes, chilies, and other aromatic ingredients. The distinctive tangy and spicy soup base, used to cook an array of meats, fish, and vegetables, delivers a rich, umami, and truly appetite-whetting experience that is a cultural cornerstone for the people of Guizhou.
